About Us
Kevin and Cindy Connected through their shared passion for the Hospitality Industry on Hamilton Island. It was our dream to open a restaurant that supports local, sourcing fresh local produce and environmental friendly.
Kevin has finally returned home to Gippsland. During his youth, he pursued his education at Gippsland Grammar School, concentrating on years 7 to 10, during which he discovered his passion for cooking while participating in home economics classes.
Kevin boasts over 18 years of extensive experience as a head chef, overseeing various cuisines and service styles. His recent focus has been on accommodating over 400 patrons per service at peak times at Manta Ray Restaurant & Bar, a prestigious holiday venue located on Hamilton Island.
He specializes in fast-paced, family-friendly shared dining experiences, with a particular passion for Italian-Mediterranean cuisine, notably excelling in pasta dishes and a range of signature creations.
Prior coming to Hamilton Island
Kevin had worked at various locations some of which are Merecedes Me at Rialto (St. Ali) where Kevin was a part of the opening team. He also had the chance to work at Rockpool Bar & Grill (Sydney & Melbourne) under chef Niel Perry management.
Where he learnt a great understanding of the foundation of cookery, the importance of gauging customer feedback and menu development to adjust for high level of customer satisfaction.
Our goal is to utilize fresh and local produce and support local farmers and growers.
Cindy acquired a Bachelor in Business Hotel Management at the highly ranked Blue Mountains International Hotel Management School.
With over a decade of experience in the food and beverage industry, she has excelled in overseeing top-tier food and beverage establishments within hotels and resorts.
Cindy further expanded her expertise by working in the luxury segment of the industry at qualia resort on Hamilton Island, as well as gaining corporate hotel experience at renowned establishments like Shangri-La Hotels, Minor Hotels, Marriott, and the Accor Group.
More recently, Cindy has worked at qualia a five-star resort overseeing food and beverage department. Qualia has won more than 50 national and international awards since it made its first accolade in 2008 which include the World’s Best Resort by Conde Nast Traveller and the “Best Luxury Resort in Australia” by the Australian Traveller’s Annual Peoples’ Choice Awards.
Having overseen a team of wait staff at Hamilton Island's distinguished two-hat restaurants, namely "Pebble Beach" and the larger "Long Pavilion," she gained valuable experience. Her tenure included working during Hamilton Island Race Week, collaborating with esteemed chefs and the Australian Ballet.
Cindy stands out in customer service with personalized attention, a passion for food and wine.
